Every year this is the box people ask about before I've even finished building it — and every bite of it tastes like a fall daydream. Let me open the Fall Harvest Box and show you what's inside.
Adirondacks, New York
Light, fluffy and spreadable, made from goat and cow milk and hand-mixed with real pumpkin and warming spices. Cozy up front, then a fresh tangy finish that keeps it from ever going cloying.
It comes from an award-winning cheese farm that doubles as an animal sanctuary up in the Adirondacks — the retired and rescued animals live out their lives right alongside the working herd. It's back for a limited time, and it's the first thing gone every year.

Shelburne, Vermont
A bold Vermont cheddar with hoppy, floral, gently yeasty notes running through it — earthy and sharp, but creamier than a cheddar that age usually is.
Here's how it gets that way: the fresh curds are soaked in IPA before the cheese is ever aged, so the beer works its way into the paste rather than sitting on the outside. It's handcrafted at a nonprofit working farm and education center, and it's Certified Humane.

Wisconsin · Large box only
Rich, smooth and supple, studded with sweet, nutty fenugreek seeds. Fenugreek tastes uncannily like maple syrup — it's the same aromatic compound, which is why this cheese reads as dessert-sweet without a gram of added sugar. Award-winning, and a genuine conversation starter on a board.

A fennel salami made in Vermont by artisans trained in the salumi traditions of Umbria. Sweet, aromatic fennel seed and garlic lift the richness of the pork, and a long, careful aging gives it a firm-but-tender bite with a subtle tang. The outside is coated in coarse-ground fennel — you'll smell it the moment you open it.

Spain
Authentic Spanish dry-cured ham, aged over twelve months in the mountain air of the Pyrenees. Three ingredients: pork, sea salt, and time. Firmer and leaner than prosciutto, with a bolder, nuttier flavor and a whisper of sweetness. It was once so valuable it was used as currency.

Sweet-tart cranberries wrapped in rich dark chocolate. Tangy fruit, deep cocoa, and just enough bitterness to keep them from being candy. They disappear on their own, but they earn their place next to a spiced cheese.

Ripe pears cooked down slowly with vanilla, cinnamon, nutmeg and allspice until the sugars caramelize. Sweet and spiced without tipping over, and made in small batches for the season only.
