Here's the trick. Every snack tray at the grocery store is four or five random items — mass-produced cheese, cured meat that's been in a case for months. Those parts were chosen for a reason, but the reason wasn't flavor. It was surviving the shelf. Then the whole thing is sold to you on convenience, so you never stop to notice you're paying for a compromise.
So we built the opposite.
Every Gourmet Bites tray starts with a single standout artisan cheese — an AOP Gruyère from Switzerland, an Ubriaco soaked in Pinot Rosé, a Prairie Breeze cheddar made with Amish-farm milk in Iowa. Then our cheesemongers choose the four things around it to make that cheese taste like more of itself. The Ubriaco gets applewood-smoked speck and coconut cashews. The Gruyère gets capocollo, dried tart cherries and dark chocolate almonds.
Building a tray is easy. Pairing one is the hard part, and it's the part you can't grab off a shelf.
Here's the part I didn't see coming. People started buying these for work lunches — a stack in the fridge, grab one on the way out instead of $16 for a sandwich they'll forget by 2pm. Then it becomes a Friday happy hour, or what they put out when people come over.
