Alpha Tolman is Jasper Hill Farm’s take on a traditional Alpine-style cheese — the kind known for its nutty depth and smooth, satisfying texture. Jasper Hill is an award-winning creamery in Vermont known for its world-class aging caves and commitment to traditional, handcrafted cheeses.

Made from raw cow’s milk and aged 8–12 months, it develops layers of flavor that evolve beautifully over time. When young, it’s buttery and gently fruity with notes of toasted nuts. As it matures, those flavors deepen into a rich, savory profile with hints of caramelized onion and broth. Its firm, pliant texture makes it a versatile choice— hearty enough to pair with cured meats, and also very melt-worthy if you want to enjoy it warm.

Fiddlehead IPA Cheddar

This bold Vermont cheddar is infused with Fiddlehead Brewing Company’s flagship IPA, giving it hoppy, floral, and gently yeasty notes that set it apart from the classic.

Not only do the cheesemakers add the beer into the vat while making the cheddar, but they add more beer to the finished block of cheese and seal it up so it can absorb the flavors and aromas of this popular Vermont IPA.

It is handcrafted at Shelburne Farms, a nonprofit working farm and education center dedicated to sustainability. Certified Humane and full of character, this cheddar is a true taste of Vermont collaboration.

Drawing on their Dutch roots, they use authentic Old World techniques — even aging each wheel on traditional Dutch pine planks. The result is a cheese with deep, nutty complexity, gentle caramel sweetness, and a smooth, firm texture that develops a satisfying crystalline bite over time. It’s a true farmstead cheese that showcases craftsmanship, heritage, and the character of fresh milk at its best.
