Frumage l'Ottavio

Frumage L’Ottavio is what happens when Fattorie Fiandino’s Alpine raw cow’s milk meets a very good beer and decides to linger. Crafted in Piemonte by the Fiandino family dairy, this soft, semi-aged cheese is folded with dark ale and barley malt, then washed as it matures for a gently boozy, malt-kissed rind. The flavor is mellow and comforting: creamy milk, toasted grain, a little coffee, a little cocoa, and the cozy feeling of ducking into a tiny Italian tavern just as the evening gets good.

INGREDIENTS: Unpasteurized (Raw) cow’s milk, Sicilian salt, artisan dark ale, barley malt, vegetable rennet (Cynara cardunculus).

Drunken Goat Riserva or Ubriaco al Pinot Rosè

You'll receive one of two wine-soaked cheeses, both made using a centuries-old practice that began as preservation and stuck around for flavor. If you get Drunken Goat Riserva from Spain, expect a semi-firm goat milk cheese with a mild, milky tang and a deep violet rind from its bath in Doble Pasta red wine. It's gentle enough to win over people who think they don't like goat cheese.

If you get Ubriaco Pinot RosĂŠ from Italy's Veneto, expect a firm, crystalline cow milk cheese with fruity, floral notes and a faintly winey finish, aged in Pinot grape skins and rosĂŠ.
