Our standard medium box comes with two cheeses and two meats, along with our curator's choice cheese & jam pairing. You will not receive every cheese listed below.

Made using milk exclusively from their own cows, this farmstead cheese reflects a commitment to quality and sustainability—the farm even converts cow waste into electricity, powering their entire facility and over 300 homes in the community.

Made in the traditional English style, this raw milk cheddar is wrapped in cheesecloth before aging for 14 months. The clothbound method allows the cheese to breathe, encouraging the development of complex flavors while forming a natural rind. The result is a firm yet crumbly texture with deep, savory intensity—sharp and buttery with nutty, slightly smoky, and earthy notes.

Each wheel is brined for 60 hours, then aged on Dutch pine planks, which naturally draw out moisture as the flavors develop. For the first 14 days, the cheese is turned daily to ensure an even butterfat distribution, resulting in a smooth, semi-firm texture with a rich, creamy bite. This variation is infused with fragrant basil, oregano, and a touch of pepper, adding layers of savory, herbaceous depth.
