Serving Tip: This cheese has an inedible wax rind. Cut the rind off before serving.

This farmstead Gouda is a true reflection of Old World tradition, crafted by a Wisconsin Master Cheesemaker Marieke Peterman—one of few women to hold this prestigious title. Every step of the process honors authenticity, from the use of imported Dutch cultures, herbs, and spices to the time-honored aging methods.

Each wheel is brined for 60 hours, then aged on Dutch pine planks, which naturally draw out moisture as the flavors develop. For the first 14 days, the cheese is turned daily to ensure an even butterfat distribution, resulting in a smooth, semi-firm texture with a rich, creamy bite. This variation is infused with fragrant basil, oregano, and a touch of pepper, adding layers of savory, herbaceous depth.

Serving Tip: This cheese has an inedible wax rind. Cut the rind off before serving.

For the best bite, pair with Jambon Honey & Herb and dried figs to bring out the cheese’s herbaceous notes while complementing the ham’s delicate sweetness.

Inspired by Cajun cuisine, this gouda has aromatic, savory flavors reminiscent of mirepoix- a classic cooking base that includes onion, celery and green bell pepper, aka the “Holy Trinity”. Aged on Dutch pine planks for 60 days minimum, it develops a rich, complex flavor. This cheese is super smooth, truly unique and hard to find.

For the best bite, pair with Beef Caraway Salami- this bite will taste like Hot Italian Sausage & Peppers!

IMPORTANT NOTE: White mold on the casing of dry-cured meats, including salami, is a natural and beneficial part of the aging process. This mold, typically Penicillium nalgiovense, plays an important role in curing by helping to regulate moisture loss and enhance flavor development. It is an indicator of a well-aged, traditionally crafted product.
