Leonora

A white mold rind envelops this brick- shaped cheese’s compact paste. As the cheese ripens, a creamline will start to form underneath the rind. Flavor Lush and lemony, the cheese balances acidity and richness. The flavor becomes more intense and mushroomy with age. History Named for its home region, Leonora® is a prime example of the recent renaissance in Spanish cheesemaking. Oscar Fernando Marcos Gonzalez make the cheese with help from his assistant, Ana, and they source milk from local farms. The recipe for Leonora® is loosely based on a traditional cheese known as Babia y Laciana, where a bright, lemony flavor is created through the process of lactic fermentation. The special shape of the cheese is modeled after a lingote, a type of adobe brick used to build houses in the region. Handling Bring to room temperature before serving. Make sure cheese is rotated and can breathe when storing. Best sliced with a wire cutter.
