Queen of the Alps

This treasure is a Swiss Alpine-style cheese with a little mountain forest tucked inside. Named for the Swiss pine, Pinus cembra, known as the “Queen of the Alps,” it’s made with rich mountain milk and finished with a delicate arolla pine-herb mix. The flavor starts sweet and milky, then opens into gentle spice and a soft woody note, like a chalet window cracked open to the pines. Rustic, regal, and just whimsical enough for the trail.

This DOP cheese is a mountain cheese with an old Friulian passport. Born from the traditions of northeastern Italy’s Montasio plateau, where cheesemaking has wandered through alpine pastures and abbey kitchens since the 1200s, this raw cow’s milk cheese is savory, mellow, and gently nutty. A little firmer and fuller than young Montasio, but still friendly on the board, it brings the cozy charm of a mountain tavern and the golden promise of frico in every bite.
