This award-winning Honey Clover Gouda is crafted by a female Wisconsin Master Cheesemaker on the Penterman Farm in Wisconsin. Made from farm-fresh, raw cow’s milk collected daily, this creamy Gouda is infused with sweet honey and delicate clover, creating a balanced, slightly nutty flavor with floral notes. Each wheel is lovingly handcrafted using time-honored Dutch cheesemaking techniques and aged on Dutch pine planks, a tradition deeply rooted in the expertise of a cheesemaker who was born and raised in the Netherlands.

Pro Tip: Serving Tip: This cheese has an inedible wax rind. Cut the rind off before serving.

Best Bite: Honey Clover Gouda, Coppa & Spiced Peach Bourbon Jam

The rich, caramelized notes of the Honey Clover Gouda pair beautifully with the delicate spice and buttery texture of Coppa, while the warm, spiced sweetness of the Spiced Peach Bourbon Jam adds a luscious, slightly boozy depth that ties everything together with a hint of Southern charm.

Ragged Point is named for the gateway to Big Sur just North of the farmstead where the cheese is made-and is a testament to the terroir of the coastal Cambria, California, Luscious and buttery, this soft-ripened, bloomy rind is a triple crème stunner.  Flavors of buttercream, mushroom, and black pepper abound, with notes of salty fudge towards the finish.  Its soft, spreadable texture makes it perfect for cheeseboards, breakfast, caviar, or baking.

After 16 years working in the cheese industry, Antonio Poves decided to take a leap of faith and build his own dairy, which makes artisanal sheep, goat, and mixed milk cheeses.  Situated in Cuenca, in the heart of Manchego country, these sheep capture the incredible variety in the terroir of this region.

With the buttery triple crème cheese coating your palate, the crisp, floral, and fruity flavors of the wine bloom on your tongue.  This pairing is generous — soft bubbles, rich sweet crème, and a clean finish —  an easy elegance that makes any occasion feel like a celebration.

Lambrusco

Emilia-Romagna, Italy

A lightly sparkling red built to cut through rich food. Expect bright acidity, vivid fruit, and a rush of dark cherry, raspberry, and blackberry — refreshing where you’d least expect it. When paired with the Golden Fleece and Prosciutto, this combo transports us to springtime in the Mediterranean.

Deep, complex, and warming — everything a mild ale can’t be. Pours dark amber and rich, with flavors of caramel, toffee, and dark dried fruit, finishing with a vinous, sherry-like warmth that lingers long after the last sip. This is going to always be great with the meats, like Toscano Salame and Prosciutto, but the real pairing to try here is with the Honey Clover gouda.
