Barricato Al Pepe

Barricato al Pepe is a unique, semi-hard Italian cow's milk cheese from the Veneto region. The name "barricato" refers to its distinctive aging process in oak wine barrels. After an initial maturation of around 90 days, the cheese wheels are removed and completely covered in black peppercorns. They are then returned to red wine barrels to continue aging for several more months, allowing the wine residue to infuse the cheese with subtle, fruity notes. The resulting cheese has a firm, buttery, and slightly crumbly texture dotted with the peppercorns, which provide a lively, spicy kick without being overwhelming. This well-balanced blend of rich, buttery, fruity, and peppery flavors pairs well with Prosecco, a fruity Italian red wine, or even in dishes like cacio e pepe.
