We work with small-scale artisans to bring you premium tasting experiences. This approach ensures you enjoy the finest, hand-selected artisanal products. Due to limited production from these artisans, our curators create several variations of each spread and items in each box may vary.

Our standard medium box comes with two cheeses and two meats, along with our curator's choice cheese & jam pairing. You will not receive every cheese listed below.

Other curations, such as large boxes and specialty boxes offer an expanded variety of items. We sincerely hope you enjoy and don't hesitate to reach out with any questions!

Each wheel is lovingly handcrafted using time-honored Dutch cheesemaking techniques and aged on Dutch pine planks, a tradition deeply rooted in the expertise of a cheesemaker who was born and raised in the Netherlands.

The rich, caramelized notes of the Honey Clover Gouda pair beautifully with the delicate spice and buttery texture of Coppa, while the warm, spiced sweetness of the Spiced Peach Bourbon Jam adds a luscious, slightly boozy depth that ties everything together with a hint of Southern charm. Serving Tip: This is a natural rinded cheese, meaning it develops its own edible exterior as it ages. Because of this, you may occasionally notice a bit of ambient mold on the rind—this is completely normal and part of the natural aging process. If you spot any, simply scrape it off and enjoy the cheese as usual. The rind itself is edible; however, if you do not care for the flavor or texture, feel free to discard it.

Georgia Tomme is a gravity-pressed cheese with a rind formed and populated with the natural flora of our aging environments. This flora can consist of any combination of off-white, gray, brown, red, orange, black, blue, and green. The rind can range from firm and dry, to slightly tacky and orange. Small holes/cracks in the rind can be present, resulting in the formation of spots of colorful micro-flora just beneath the rind surface.This is not a Food Safety risk and can be cut away and discarded.

Pro Tip: Peel casing off prior to eating. Use a serrated knife to cut thin slices before plating.

This pairing works particularly well because of the mix of fat, spice, acidity, and umami, making the pairing exciting rather than overpowering.

Serving Tip:
For the best texture and flavor, we recommend peeling off the beef casing before enjoying your chorizo. Beef casings are naturally thicker and more durable, which helps protect the chorizo during the curing process, but they can be tough and chewy when eaten. Removing the casing allows you to fully enjoy the rich, smoky flavors and ensures a more enjoyable bite. Simply slice the chorizo and gently peel away the casing before serving.
