Smoking Goat

Goat's Milk ‱ Semi-soft

Murcia, Spain
Mild
Bold

Smoking Goat is a captivating smoked goat’s milk cheese from the Murcia region of southeastern Spain, a place known for its rich dairy traditions and bold flavors. Made from pasteurized Murciana goat’s milk—prized for its high butterfat and naturally sweet, creamy profile—this cheese is gently aged, then cold-smoked over beechwood to infuse it with a warm, aromatic smokiness. The result is a semi-firm cheese with a smooth, supple texture and a balanced flavor: bright and tangy from the goat’s milk, with mellow, savory smoke notes that never overpower. It’s complex yet approachable, making it a standout on cheese boards, in sandwiches, or melted into anything that needs a little smoky intrigue.

Best paired with:
Sweet & Spicy Prosciutto

Iowa, USA
Mild

Spicy Prosciutto is a bold twist on a classic Italian staple. Made from responsibly raised pork and aged to perfection, this prosciutto is tender, silky, and full of umami depth. What sets it apart is the subtle infusion of chili and sugar—creating a slow-building warmth that plays off its natural savory-sweetness without overwhelming the palate.

Best paired with:
Smoking Goat

Ingredients: Berkshire Pork, sea salt, spices, agave

Purple Mulberries

Mild
Bold

In Persian, the mulberry is called shahtoot—“king’s fruit”—and nowhere does it reign more fully than in the highlands of Afghanistan, where Morus nigra trees have grown wild in the shadow of the Hindu Kush for thousands of years. The berries are harvested by hand each summer and dried slowly in the sharp mountain sun, untouched by pesticides or commercial farming, in a tradition unchanged since these same mountains served as a waystation on the Silk Road. The result is a fruit of quiet intensity: a satisfying crunch that gives way to a deep, honey-sweet richness, lifted by a wildflower bouquet and finishing with a warm, grassy fade that lingers long after the last bite.

Best paired with:
Smoking Goat

Wasabi Peas

China
Mild
Bold

These crunchy, dry-roasted green peas are coated in a starchy, slightly thickened shell seasoned with wasabi and salt. The heat is sharp and nasal rather than lingering — it blooms quickly and fades cleanly. Underneath the kick is a mild, earthy sweetness from the pea itself, with a satisfying snap and a light powdery finish. The saltiness and crunch contrast nicely against rich cheeses, where the creaminess tempers the wasabi sting.

Best paired with:
Smokin' Goat

Ingredients: Green Peas, Glutinous Rice Flour, Modified Corn Starch, Corn Starch, Sugar, Salt and/or Sea Salt, Soybean Oil, Wasabi, FD&C Yellow #5 & Blue #1.

Drink Pairings

While drink pairings are ultimately a matter of personal preference, we invite you to consider our recommended pairings to take the flavors up a notch!

Sherry

Jerez de la Frontera, Andalusia, Spain

One of the oldest wines on earth, first made by Phoenician settlers around 1100 BCE and shaped by every civilization that followed—Greek, Roman, Moorish, and British. When Sir Francis Drake plundered Cádiz in 1587 and sailed home with nearly 3,000 barrels, he accidentally became its greatest salesman. Aged in the solera system—where younger wines blend continuously with older
ones, sometimes decades deep—Sherry spans more styles than almost any other wine: from bone-dry, saline Fino to the gloriously syrupy richness of Pedro XimĂ©nez.

Rioja

Ebro River Valley, Northern Spain

Spain’s most celebrated wine region, named after the humble Rio Oja and home to a winemaking tradition stretching back to Roman times. Built on Tempranillo, Rioja defines quality by time in the barrel—its four-tier system runs from bright, fruit-forward Joven to Gran Reserva, which may spend years in oak before release. Rich and layered in the glass, with dark cherry, plum, and vanilla gradually deepening into leather, tobacco, and spice.

Double IPA

Your favorite brewery!

Born in 1994 when brewer Vinnie Cilurzo at Blind Pig Brewery accidentally added too much malt and doubled down with twice the hops rather than dump the batch. He later perfected the style at Russian River Brewing, where Pliny the Elder became one of the most coveted beers in America. Bold,
resinous, and unapologetically intense—wave after wave of citrus, pine, and tropical fruit, with a clean, dry finish that somehow always keeps you coming back.

Café Macchiato

Italy

Italy’s answer to the question nobody else thought to ask: what if espresso, but with just the faintest memory of milk? The name means “stained” in Italian—a single shot marked by the smallest spoonful of foamed milk, enough to soften the edge without diluting the soul. Bold, rich, and unapologetically
coffee—all the intensity of espresso, with just enough cream to make it whisper.

White Tea in Dried Mandarin Orange

Xinhui, Guangdong & Fujian, China

One of China’s most charming inventions: delicate white tea leaves packed by hand into the hollowed shell of a Xinhui mandarin—a variety prized in Guangdong since the Ming Dynasty and long revered in traditional Chinese medicine. As the shell dries and ages, the tea slowly absorbs the mandarin’s
oils, and the two transform each other over time. Brewed whole, it yields a soft, luminous cup—light floral and honey from the white tea, lifted by a warm citrus glow that lingers all the way through.
