Leonora is a soft-ripened goat's milk cheese that captures the spirit of the Spanish countryside. Shaped like an adobe brick, it offers a dual texture — creamy and luscious near the edible rind, dense and chalky at the center — with flavors of sour cream, bright lemon citrus, and earthy button mushroom.
Try with any sweet fruit jam or honey! The flavor changes with each one. Bonus points on spread and crumbled on warm toast or in a Tortilla Francesa (egg omelet).
Cutting instructions: Remove packaging. Cut the cheese radially from the center in small wedges, including the rind into wedge-like pieces. The rind and any other blue-green mold that develops is safe to eat.
