A rare 60-day raw-milk toma made from Bruna Alpina cow’s milk and thistle flower, Lou Berger Pichin honors its Occitan name—“small mountain shepherd”—and the legacy of producer Mario Fiandino’s grandfather, Nonna Magno. At the Fiandino farm, Bruna Alpina cows are raised with exceptional care, even soothed by music tuned to calming frequencies. The result is a creamy, gently aromatic cheese with notes of mushroom, fresh-cut grass, and sweet milk—an outstanding value for such a distinctive and uncommon style.
