A Belgian Gouda-style gem from Kaasboerderij 'T Groendal in Antwerp, developed in partnership with acclaimed affineurs from Van Tricht. Aged nine months, this pasteurized cow's milk cheese is dense and toothy, with pronounced tyrosine crystals throughout the paste — remarkable for a cheese of its age. Sweet with boozy stone fruit notes, hints of ripe cherry, and a slightly acidic dark chocolate finish. Far more complex than a typical Gouda.
