In Persian, the mulberry is called shahtoot—“king’s fruit”—and nowhere does it reign more fully than in the highlands of Afghanistan, where Morus nigra trees have grown wild in the shadow of the Hindu Kush for thousands of years. The berries are harvested by hand each summer and dried slowly in the sharp mountain sun, untouched by pesticides or commercial farming, in a tradition unchanged since these same mountains served as a waystation on the Silk Road. The result is a fruit of quiet intensity: a satisfying crunch that gives way to a deep, honey-sweet richness, lifted by a wildflower bouquet and finishing with a warm, grassy fade that lingers long after the last bite.
