Raclette Obwalden is a semi-firm cow’s milk cheese from the town of the same name in Switzerland, made in the classic spirit of one of the Alps’ great comfort foods. Aged about 3 months, it is mild, creamy, and gently earthy, with a cozy cave-aged character that makes it just as good cubed up on a board as it is melted over potatoes, vegetables, sausage, or crusty bread. Think chalet table, bubbling cheese, and a very good reason to linger.
