Handcrafted in the rolling hills of Shullsburg, Wisconsin, Red Rock Cheddar is a striking and unique cheese that beautifully blends tradition and innovation. Produced by the fourth-generation cheesemakers at Roelli Cheese Haus, this semi-soft, cave-aged cheddar reflects a deep commitment to artisan methods and local terroir.

Named for the vibrant red hue of its natural rind, this cheese stands out with its eye-catching marbling of blue veins. Made from pasteurized cow’s milk sourced from local farms, Red Rock is aged for 3 to 6 months, allowing its complex flavors to develop.

The flavor profile is a delightful balance of buttery cheddar richness and the tangy, slightly earthy notes characteristic of blue cheese. Its creamy yet crumbly texture makes it incredibly versatile—perfect for slicing onto a charcuterie board, melting into a gourmet burger, or crumbling into a salad for a bold twist
