Robiola due Latte

A soft-ripened Italian beauty from the Langhe hills of Piedmont, Robiola Due Latte — "two milks" — is a gentle blend of cow's and sheep's milk that comes together as something greater than the sum of its parts. Silky, unctuous, and just barely holding its shape, it melts on the tongue with flavors of fresh cream, button mushrooms, and a whisper of sea salt. The tender bloomy rind is entirely edible and adds a subtle, pillowy finish. Mild enough to win over everyone at the table, but complex enough to keep things interesting. Best enjoyed at room temperature, ideally with something bubbly nearby.
