Ubriacone is a semi-firm cow’s milk cheese from Veneto, Italy, aged for about 10 months and soaked in red wine. Its name means “big drunk,” a nod to the wine-infused rind that imparts deep, fruity complexity. Nutty and robust with hints of berry and spice, it pairs beautifully with salumi and full-bodied reds.
